Skinny Turkey Lasagna Rolls

Hello there! Today I’m sharing a new recipe that has been very popular at my house lately! I love it because it’s pretty simple to make and it’s so good, but I don’t feel too guilty eating it since it’s not loaded with pasta like classic lasagna. We lighten it up with the roll method (one serving has just one lasagna noodle), use ground turkey in our sauce and sneak in some spinach and zucchini.

Low fat Lasagna, Turkey Spinach Lasagna

Ingredients:
  • 8 Lasagna Noodles (I use whole wheat)

Pasta Sauce:

  • 1 jar Spaghetti Sauce
  • 1 lb lean ground turkey
  • 3/4 cup chopped zucchini (optional)

Noodle Filling:

  • 15 oz low fat ricotta cheese
  • 1/2 cup fresh grated parmesan cheese
  • 1 cup low fat Mozzarella cheese
  • 3/4 cup cooked spinach, chopped
  • 1 egg
  • salt and pepper
Directions:
  1. Preheat oven to 350 degrees
  2. Cook noodles, rinse, drain and set aside
  3. Brown turkey and mix in zucchini to cook, then mix in spaghetti sauce and set aside

  5. Ladle a thin layer of sauce (about 1 cup) on the bottom of a 9 x 13 baking dish.
  6. Next make sure your noodles are mostly dry by gently wiping them off with a paper towel
  7. Lay out noodle (either in your dish or on wax paper) and spread ricotta mixture over your noodle, about 1/2 – 1/3 cup per noodle Skinny Turkey Lasagna Rolls || Perpetually Daydreaming3

  12. Cover and bake at 350 for 40 minutes

  • This is one of my favorite recipes to make – and I usually split the noodles in half and we have enough for leftovers the next day!! I have never added zucchini to mine – but will the next time I make them!! Thanks so much!

  • Yummm! We love lasagna rolls – we usually do a “caprese” roll with fresh tomato and ricotta cheese mixture but I’m definitely going to try this one!
